Most people have a tendency to use their leftover g/elixir to upgrade storages, which is cool, but unless you have 4 or 5 builders, it costs them time, which is what you don't want. In the time it takes to upgrade a single elixir collector or g mine (26 days), enough resources could have been raided to get an upgrade for something you really need, like a mortar or wizard tower or better barracks.

You need to collect the g by tapping on the mine. The collected g will be stored in your g storage. How much g the mine produces per hour is depending on the mines level. The higher the level the more resource it will produce. If your mine is level 5 you can double the production output by spending gems.
